Valentine's Dinner For Two

Main
Steak, Potato Wedges & Side Salad
For the steak:
- · 2tsp of olive oil
- · Nob of butter
- · 2 Sirloin steaks
- · Sprig of rosemary
- · Salt and pepper, to taste
For the sauce:
- · 500ml of red wine
- · 2 cloves of garlic
- · 3 finely chopped shallots
- · Splash of double cream
- · 300ml of beef stock
- · Salt and pepper, to taste
For the potato wedges:
- · 3 yukon potatoes
- · 1tbsp of olive oil
- · 1tsp of rosemary
- · Salt and pepper, to taste
For the side salad:
- · 2 cups of spinach
- · 1 cup of rocket
- · 1 tbsp of olive oil
- · A squeeze of Lemon juice
- Salt and pepper, to taste
Method
First, start off by preheating the oven to 220 degrees, then
move on to prepping the potatoes. Wash the potatoes and pat dry. Then cut the
potatoes into wedges and place on a microwavable dish, place in the microwave
for 5 minutes. This will cut down the time that the potatoes take in the oven
by half, meaning that your dinner is in your gob faster! Then place the
potatoes on a baking tray and toss with olive oil, be careful with the potatoes
to insure the potato does not break apart. Then place them in the oven foe 25
minutes.
Next move on to making the side salad. Wash and dry the
spinach and rocket, then place in a bowl. Then dress with olive oil and salt and
pepper to taste.
To cook a belter of a steak, first take the steak out the
fridge for 20 minutes before cooking so that the steak is at room temperature.
This makes it easier to cook evenly. Then season the meat with salt and pepper
and place in the frying pan on high heat and add olive oil. Cook the steak for 3
minutes on each side for medium rare. While the steak is cooking add a nob of
butter and the rosemary and baste the steak. Once the steaks are cooked let them
rest for 2 minutes.
While the steaks are resting, make the sauce. Add the finely
chopped shallots and the garlic to a pan with oil. Once they have cooked and the garlic is fragrant,
and the shallots are translucent, add the red wine (Save some for yourself for later).
Let the alcohol cook off and reduce by half. Then add the beef stock and then
reduce by half again, this will make a delicious thick sauce. Finally add a
splash of double cream.
Assemble the dish and tuck in. Best with a glass of red
wine.

Chocolate Orange Mouse
Ingredients
- · 150 grams of mini marshmallows
- 250 grams of dairy milk chocolate
- · 284 milliliters of double cream
- 1tsp of vanilla extract
- 50 grams of butter
- An orange
Method
First add the marshmallows along with the butter into a pan until
it is all melted together. Next chop up the chocolate and add to the pan. Once
the chocolate is melted and combined, juice the orange and add in the juice to
the mixture. Mix and then set aside to cool. While that is happening add the vanilla
extract to the cream and whip. Then fold the cream into the chocolate marshmallow
mixture and serve in a glass with grated orange on the top.
