Fast Weekday Dinner!
This salmon pasta dish is perfect for a quick weekday dinner! If you’re in a rush this evening this dinner only takes 30 minutes to make! Delicious, healthy scran in no time!

Ingredients:
- 220g of tender stem broccoli
- 260g of salmon
- 220g of dried fusilli pasta
- 230g of baby plum tomatoes
- Small handful of pine nuts
- 1 red chilli
- 1 clove of garlic
Method
First start of by preparing all the ingredients:
- · Cut the tender stem broccoli into bite size pieces
- · Cut the all baby plum tomatoes in half
- · Chop the garlic finely
- · Cut the red chilli finely (keep the seeds for a spicier taste)
- · Chop the salmon into bit size chunks
Let’s get into cooking:
First start out by bringing a pot of water to the boil. Then
add the chopped tender stem broccoli to the boiling water for 1 minute. Once
the minute is up, take the broccoli out with a slotted spoon and set aside. Use
the same boiling water and add the dried pasta and leave in following package
instructions.
Then add olive oil to a pan and add the garlic and pine nuts,
cook till it becomes fragrant. Following this, add the halved baby plum
tomatoes, along with the chopped tender stem broccoli to the pan. Next, add the
chunks of salmon into the pan and cook till the salmon becomes flaky. After this
add the chilli (when using fresh chilli add it in near the end of cooking as it’ll
keep the freshness). At this point a cloudy liquid should have formed within
the pan, this is the juices of all the ingredients that you have cooked, this will
act as the sauce for your pasta. This liquid is full of flavour and will really
make your pasta taste brill! Lastly, get a slotted spoon and take the pasta out
of the pot and move to the pan. Stir this together so that all the cloudy sauce
covers the pasta. Plate up and tuck in!
