Easy Burrito Bowl!

Ingredients:
- 215g of Quinoa
- 2 Chicken Breasts
- 2 Red Bell Peppers
- Taco Seasoning
- 1 Avocado
- 1 Chili
- Handful of Coriander
- Juice of Half a Lime
- 120g of Black Beans
- 120g of Sweetcorn
- lettuce
- Salsa
- Sour Cream
Method:
First start of by preparing all the ingredients:
- Cup the chicken into bite size pieces
- Cut the bell peppers into strips
- Dice up the chili
- Cut the coriander
- Juice the lime
- Wash the lettuce and chop it up
Let’s get into cooking:
First start by rinsing the quinoa, this will get rid of the bitter taste. Next add the quinoa to a pan of boiling water, it should be two parts water to one part quinoa. Then leave the quinoa for 20mins and it should expand and become fluffy as it takes on the water, similar to rice.
The next step is to begin cooking the chicken. Add the diced chicken to a hot pan with a splash of olive oil. Add salt and pepper to taste and cook until the chicken becomes white all the way through. Then add the chopped bell peppers, cook these till the crunch and rawness is gone. Now it is time to add the taco seasoning! Add a splash of water to the pan and add the seasoning, mix well until everything is covered and then set aside.
Now move onto the guacamole (a.k.a the best bit). Start by smashing the avocado with a fork, once that is done add the chopped up coriander and chili. Lastly add the lime juice and that's you done!
Finally, heat the black beans and the sweetcorn in the microwave, insure that the container you place them in is microwave save. Place them in the microwave for three minutes, until they are heated through. Add the lettuce and Voila! That is the Mexican burrito bowl done, it is as easy as that. Just assemble and serve with sour cream and salsa and tuck into your scran!
