Irish Coffee Cupcakes!!

Ingredients:
Cupcakes-
- 250g of softened butter
- 340g of caster sugar
- 6 eggs
- 230g of milk
- 120g of sour cream
- 370g of all purpose flour
- 2tbsp of instant coffee
- 1tbsp of Irish cream
Icing-
- 150g of icing sugar
- 2 tbsp of water
- 2tbsp of instant coffee
- 1tbsp of Irish cream
Irish Cream-
- 235g of double cream
- 395g of condensed milk
- 400ml of whiskey
- 3tbsp chocolate syrup
- 1tsp of vanilla extract
- 1tsp of instant coffee
Method:
Cupcakes-
First, preheat the oven to 180 celsius and place 15 cupcake cases into a cupcake tin, ready for the mixture.
Start off by adding the softened butter and caster sugar to a big bowl. Then use an electric mixer to cream the butter and sugar together until the mixture becomes lighter in colour. Next, add the six eggs to the mixture. Add the eggs one at a time, mixing the mixture before each egg. After this add the milk, pour in a wee bit at a time and stir. This will insure that the mixture is well incorporated. Next add the sour cream, instant coffee and irish cream and mix. Now once all the wet ingredients have been added, it's time for the dry ingredients. Sift the flour into the mixture and fold it in. Finally add the mixture to cupcake cases and place in the oven for 20 minutes.
Icing-
To make the icing add the icing sugar to a bowl and then the water, coffee and Irish cream. This will make the mixture into a pourable liquid. Once the cupcakes are made pour the icing onto the cakes to finish.
Irish Cream-
To make your own baileys irish cream at home you need to do as follows. Add the double cream, condensed milk, whiskey (I used dimple), chocolate syrup, vanilla extract and the instant coffee. Mix all the ingredients together and Voila, it's ready to drink!
Yummy, needs more whisky though!
